Eppie’s Estate Riesling Pumpkin Custard
From Eppie Skelton, Qwner, Oakwood Cellars, Benton City, Oregon

Ingredients:
1 ˝ cups Oakwood Cellars Estate Riesling
1 tsp. cream of tartar
1 tsp. pumpkin pie spice or more to taste
5 unbeaten eggs
˝ cup brown sugar
˝ cup white sugar

Preparation:
Place all ingredients in top of a double boiler over warm water initially, not boiling water. Beat vigorously with a wire whisk. Cook custard until it thickens, whisking continually while cooking. Serve hot or cold. Takes about 30-45 minutes. Cool, then chill. Serving idea: After chilling, spoon into pre-baked miniature piecrust shells, top with a spoonful of whipped cream.
